This microlot comes from a single block called Godown Patte on our Ratnagiri Estate, grown at 4400 feet from the SLN 9 varietal, an Arabica bred by India’s Central Coffee Research Institute for exactly this kind of complexity.
The cherries were left on the tree until they hit a Brix of 25.4, then floaters were removed before they went into the bio fermenters. From there it’s a proper culture process: lab cultured microbes and lactic acid bacteria were added, and the coffee fermented for 48 hours in a sealed environment rich in carbon dioxide. It then moved straight to raised beds, where it dried slowly over 29 days with constant stirring rather than being rushed.
What that gives you is a coffee that’s low in acidity, high in sweetness and full bodied, with just enough bitterness to keep it from tasting one note. Floral up front, with jasmine coming through at real intensity, not sitting quietly in the background. Roasted light-medium to protect that character, best brewed through a V60, AeroPress or your usual filter setup.
